ABOUT THE FOUNDER
A Decade in the Diaspora. A Lifetime of Purpose.My name is Augustine Nii Amarh Quarcoo, also known as Chef Nii.For over 10 years, I have lived, worked and built my career in the United Kingdom. During that time, I successfully established and ran *Waakye Joint Ashford* A business that proved there is huge global demand for authentic, high-quality Ghanaian and West African food.
But my vision goes far beyond serving meals. I realised that our culture and our flavours have the power to build wealth, create jobs and put Ghana on the map as a producer of premium goods.I am now returning home to build something greater. Jollof & Smoke is the bridge between everything I have learned abroad and the future I want to build for our people. This is not just my business -it is my contribution to our nation’s growth.
RESEARCH & DEVELOPMENT
THE SCIENCE OF SMOKE: R&D AT THE CIA
Excellence requires precision.
To turn our traditional recipes into products that can be sold worldwide, we need to combine our heritage with modern science. That is why in September 2026, Jollof & Smoke will begin a technical residency at the **Culinary Institute of America (CIA)** one of the most respected food science institutions in the world.
During this time, we will:
• Standardise our unique "smoke flavour profile" so every bottle tastes exactly the same
• Ensure all products meet strict international safety and shelf-life standards (FDA, EU and UK regulations)
• Develop production methods that can be scaled up for large-volume manufacturing
• Create detailed technical documentation and intellectual property
We are not just making food — we are engineering a global industrial formula that carries our name and our standards.

OUR COMMITMENT

Raw Material Sourcing
We plan to source between 15 and 25 metric tons of fresh produce annually including peppers, onions, tomatoes, ginger and local spices directly from Ghanaian farmers.

Job Creation
Our operations will directly and indirectly support the livelihoods of between 50 and 100 farming households in our first phase, with numbers growing as we expand.

All our manufacturing and processing facilities will be based here, bringing technology, infrastructure and revenue into our local economy
